The menu showcases local produce such as Greenwell Point mussels in a mild and creamy massaman curry, or lightly fried tempura oysters in a nest of vermicelli noodles. Indigenous flavours are subtle rather than intrusive punctuating a dish without dominating as in sensitively handled kangaroo fillet with mountain pepperberry mascarpone, or a just-tangy lemon myrtle bavarois with roast quince and star anise sauce.
